OUR HEAD CHEF – TODD TURNER

Life has a funny way of guiding you to a place you were not quite sure of, but became a contributing part of your life. Being a chef wasn’t my first choice after leaving school. I simply got thrown straight into the deep end as a young lad you might say and luckily enjoyed it from the get-go!

I started my career at the Granary as a very young chef, while attending college for formal training. After completing my training, I left the Granary to get wider experience at some of the other notable hospitality businesses. After a number of years away from the Granary, it is so nice to be back home. I now have the role of pushing the Granary kitchen back to its glorious past and hopefully take it to the next level.

Over the years I have worked in some great kitchens, gathering so much knowledge in all types of foods. I am very lucky to have worked for some amazing award-winning chefs over the years, whom have had a massive impact on my vision for where I want to go with my food.

Food can be made with so much variety and it has bloomed so much over the last 10 years, that it is now very much a fashion. There is so many food related programs on TV. internet, etc. and social media has taken a massive step in presenting food for all sort of tastes. Everyone can now access social media using their phones from everything on types of food, the way food is presented, critiquing, etc. and everyone has an opinion through social media to provide their views. So, it is so important to ensure that each Chef thinks beyond simply cooking great food, but all these other social media aspects to woo their guests.

When just focussing on the food, I truly believe it is so important to show off everything about British produce and its specific taste when writing my menus. I love testing with flavours, and I love real honest seasonal food. Although sometimes I think you can’t beat a classic dish.

When cooking, my biggest hope is to create memories for the guest. Each time I achieve that, I’m happy. After all, where will my food be without our guests.
